The smack across the face was not scripted. Anna felt that it was something Sookie would do, so she went with it, without telling Stephen.

That was the perfect moment to come clean and tell Sookie about the Queen and her plans, but he preferred to lie and manipulate. Eric wasn’t himself either after frying under the sun, however unlike beel he didn’t loose control.

Bill had so many chances to confess the truth. I’m not saying it was easy, or that, if he had, Sookie would/should have forgiven him. But there were plenty of moments to come clean and be honest for once. And this was the ultimate one! Instead, what he chose is, again, trying to prove - this time very unsuccessfully - that he is better than Eric: You see the difference between the way I look at you and the way Eric and Russell do? 

Again, like always, trying to manipulate her with the L.O.V.E. card… 

Bill really reached the bottom of this douchebaggery in season 3. Luckily, the writers exposed his lies very well by creating such an obvious contrast between Bill almost draining Sookie VS Eric managing to control himself with little effort after a few drops of her blood, even though he was in a worse shape than Bill.
